Dish of the month - July



The ICC Birmingham’s Executive Head Chef, Simon Hellier, is sharing some of his signature starters with us.  For July, Simon tells us about his take on a British classic, that with some innovation and a fresh approach, can still continue to delight guests as much as it always has.

Taking a British classic with twist to give it a modern edge that will leave guests delighted. When creating new menus, Simon loves to look back on classics from his chef training days and identify those classic dishes that have withstood the test of time but deserve a modern-day uplift. This light dish is perfect for a summer event but suitable all year round, the high-quality ingredients in an eclectic presentation with edible flowers and bright Summer colours making this dish highly instagramable.
